Grilled Berkshire Pork Chops with Spring Herb Pesto

Spring is finally here in Kansas—and that means it’s time to fire up the grill! One of our favorite ways to showcase the deep, rich flavor of our heritage Berkshire pork is with this simple and stunning recipe for Grilled Pork Chops with Spring Herb Pesto.

The natural marbling in our Berkshire chops makes them incredibly juicy and flavorful, and the fresh herb pesto adds a bright, zesty finish that tastes like spring on a plate.

Ingredients

  • 2 R Family Farms Berkshire pork chops
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Spring Herb Pesto

  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup toasted pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush pork chops with olive oil and season generously with salt and pepper.
  3. Grill the pork chops for 4–5 minutes per side, or until the internal temperature reaches 145°F.
  4. While the chops rest, combine all pesto ingredients in a food processor and pulse until smooth.
  5. Spoon pesto over the grilled pork chops and serve with your favorite spring vegetables or a fresh salad.
