**Farmers advise – Take them to 140F and remove from heat. Cover and rest them for 10-15 minutes before eating to let those juices and flavor redistribute throughout the chop!
Please note these are a natural item and there can be variation in size. Our target weight is 1.5 pounds and most packages (two chops) will meet or exceed this weight.
