Sunday Brunch - Crustless Quiche with Bacon!

While we try to have a decent breakfast before we head to the farm every day, Sunday is the guaranteed day that we sit down and have a beautiful brunch!

This quiche is SUPER easy (right up my alley) and can be prepped ahead of time or frozen for later. Feel free to add more bacon, we won’t judge.

Crustless Quiche with Bacon

What you need:

8” Cast Iron or other oven friendly skillet (I’ve also made in a 6” and 10” cast iron, you just have to adjust your cooking time by watching to see when the quiche sets)

8 pieces of R Family Farms bacon, cooked, crispy and crumbled (divided, 6 pieces for inside the quiche, 2 pieces for garnish)
6 eggs
1/2 cup 1/2 and 1/2 (can be substituted for milk)
1/2 cup whipping cream (can be substituted for milk)
1/3 cup cooked, diced broccoli (I’ve used frozen or fresh- whatever you have on hand!)
1/4 cup diced onion
1 tsp garlic powder
1 cup cheese (your choice! we’ve used sharp cheddar and Monterrey jack.)
Salt and pepper to taste
Green onions to garnish (optional)

  1. Preheat oven to 400 degrees.

  2. Cook that bacon! Use the skillet that you’re planning on using to bake the quiche, and cook your bacon fully. We prefer a crispy bacon, but you do you! Remove bacon to a plate lined with paper towels to soak up any extra grease. Reserve 1 tablespoon of bacon grease for later, discard the rest. Let pan cool. (Pro-tip: I’ll cook multiple pounds of bacon at once and freeze or store in the fridge until needed for recipes, etc. This way, you always have bacon on hand, and you’re not splattering grease every time you want to add some goodness to your recipes!)

  3. In a large bowl, beat 6 eggs until fully blended. Add 1/2 cup 1/2 and 1/2, 1/2 cup whipping cream, 6 sliced of crumbled bacon, 1/3 cup cooked broccoli, 1/4 cup diced onion, 1 tsp garlic powder, 1 cup cheese, and salt and pepper. Mix well!

  4. Add bacon grease to skillet if needed. Pour the egg mixture into the skillet. Bake for 30 minutes or until set and golden brown.

  5. Add extra bacon crumbles, green onions, or whatever you like to the top and serve!
