  • Season simply with salt and pepper. Cook over high heat to medium-rare (130–135°F), then rest for 5 minutes. Always slice against the grain to preserve tenderness.

    Frying (Skillet or Cast Iron)

    1. Heat a heavy skillet over high heat.

    2. Sear for 3–4 minutes per side.

    3. Add butter and herbs to baste for final minute.

    4. Rest and slice across the grain.

    Oven-Baked

    1. Preheat oven to 425°F.

    2. Sear steak first in a hot skillet for 2–3 minutes per side.

    3. Transfer to oven for 5–7 minutes.

    4. Rest before slicing.

    Air Fryer

    1. Preheat air fryer to 400°F.

    2. Lightly oil and season the steak.

    3. Cook for 10–12 minutes, flipping halfway through.

    4. Let rest before serving.

    Grill

    1. Heat grill to high.

    2. Grill 3–4 minutes per side.

    3. Rest, then slice thinly against the grain.

    4. Optional: finish with compound butter or chimichurri.

    3. During the last minute, add garlic butter and herbs to baste.
