Frying (Skillet or Cast Iron)
Heat pan over medium-high.
Score fat cap slightly and sear fat side down for 3–4 minutes until golden.
Flip and sear meat side for 2–3 minutes.
Finish in oven if thick. Rest, slice, and serve.
Oven-Baked
Preheat oven to 375°F.
Sear fat side down in an oven-safe pan for 4 minutes.
Flip and transfer to oven for 10–15 minutes.
Rest and slice thinly across the grain.

Cook for 10–12 minutes, flipping once.
