  • Keep the fat cap on while cooking to enhance flavor and moisture. Cook to medium-rare (130–135°F) and always slice against the grain for tenderness.

    Frying (Skillet or Cast Iron)

    1. Heat pan over medium-high.

    2. Score fat cap slightly and sear fat side down for 3–4 minutes until golden.

    3. Flip and sear meat side for 2–3 minutes.

    4. Finish in oven if thick. Rest, slice, and serve.

    Oven-Baked

    1. Preheat oven to 375°F.

    2. Sear fat side down in an oven-safe pan for 4 minutes.

    3. Flip and transfer to oven for 10–15 minutes.

    4. Rest and slice thinly across the grain.

    Air Fryer

    1. Preheat air fryer to 400°F.

    2. Score fat and season generously.

    3. Cook for 10–12 minutes, flipping once.

    4. Let rest before slicing.

    Grill

    1. Preheat grill to medium-high.

    2. Grill fat side down first, 4–5 minutes.

    3. Flip and cook another 4–6 minutes until medium-rare.

    4. Rest 5–10 minutes before slicing.

  • Picanha is perfect for skewering and grilling over open flame (Brazilian churrasco style), or roasting whole and slicing thin for steak sandwiches, tacos, or platters.

  • Ingredients:

    • 1 R Family Farms Beef Picanha Steak

    • Coarse salt

    • Olive oil (optional)

    • Wooden or metal skewers (for churrasco style)

    Instructions:

    1. Score fat cap and cut into 2–3 thick steaks, folding each into a “C” shape.

    2. Skewer and generously salt.

    3. Grill over open flame, rotating every few minutes, until internal temp reaches 130–135°F.

    4. Let rest, then slice thinly and serve with chimichurri or farofa.
